The recent heatwave has coincided with an unaccountable craving for strawberries! Whilst the temperature was still bearable for me, I took pity of my suffering daughter and husband and set out to prepare something refreshing and cooling involving strawberries. As it could not be a liquid cocktail, my thoughts turned to ice cream. Now that the heat is well gone, we are at least left ready with a simple recipe for the next round!
3-Ingredient Strawberry Ice Cream (and no artificial anything!)
A super easy recipe. It’s a great match with our canelés or mini canelés and makes a scrumptious dessert for kids and big(ger) kids!
I have made this recipe using my favourite domestic cooking robot, my Thermomix! But you can use any of the cooking chef/Mixer range.
1- Cut your well-washed strawberries into quarters and put them in the freezer for at least 6 hours.
2- Put sugar in the bowl and mix 10 Sec./Speed 10 (maximum speed).
3- Add frozen strawberries and mix 15 Sec./Speed 8.
4- Add double cream and mix 40 Sec./Speed 5.
5- Scrape down the sides of the bowl with the spatula and repeat until creamy and smooth.
6- Pour the mixture into a container, cover and freeze until set, for a minimum 1 hour.
Delight your heat-suffering guests!
... Oh, and we also found out why I was so looking forward to having strawberries :)
